FABADA ASTURIANA

Preparation Method :

  • Drain the beans, put them in a saucepan and cover with plenty of cold water.
  • Bring to the boil for 20 minutes until they are just beginning to soften.
  • Drain and tip into a casserole dish.
  • Heat the oil in a frying pan and fry the bacon lardons, belly pork and onion until lightly browned.
  • Add the contents of the frying pan to the casserole dish with the chorizo, morcilla and peppers.
  • Crumble in the saffron threads and pour over just enough cold water to cover the ingredients.
  • Cover the casserole with a lid and bake in a preheated oven, for about 2 hours or until the beans are tender and the juices have thickened slightly.

INGREDIENTS

  • 350 grams butter beans, soaked overnight
  • 5 tablespoons Cooking oil
  • 150 grams smoked bacon lardons
  • 350 grams lean belly pork, skinned and cut into large pieces
  • 2 onion, chopped
  • 150 grams hot or mild chorizo, cut into small pieces
  • 150 grams morcilla, cut into small pieces
  • 30 grams dried red peppers, broken into pieces
  • Good pinch of saffron threads
  • Salt and pepper
