ARROZ CON POLIO

Preparation Method :

  • Boil the chicken with a little salt. Shred and keep it aside.
  • Heat the ghee-oil mixture. Add the whole spices and in a few seconds, the sliced onions. When the onions turn golden brown, add ginger, and garlic and fry for 1 minute.
  • Then add the tomatoes and fry for another 2 - 3 minutes. Add the rice and turmeric powder and saute for 5 minutes.
  • Add the chicken stock till 1 inch above the surface of rice followed by lime juice and salt.
  • Cook covered on high flame and then low till the stock is absorbed and rice is light and fluffy. Serve the rice hot, garnished with shredded chicken and olives.

INGREDIENTS

  • 350 grams long grain rice, rinsed, soaked and drained  
  • 500 grams chicken, washed and drained
  • 250 grams onions, finely sliced
  • 1 black cardamom
  • 2 inch piece ginger, crushed
  • 6 cloves of garlic, crushed
  • 6 cloves
  • 2 inch cinnamon sticks
  • 4 green cardamoms
  • 1 tomato, roughly chopped
  • ½ teaspoon turmeric powder
  • Chicken stock
  • Juice of 1 lime
  • A few olives
  • 75 ml ghee-oil, mixed
  • Salt, to taste
