EMPANADAS

Preparation Time :
40 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Put the flour and butter in a food processor and blends until the mixture resembles fine breadcrumbs.
  • Add egg yolk and cold water and mix to dough. Knead lightly to make smooth dough, cover and chill for at least 30 minutes.
  • Make the filling. Put the basil and olives in a food processor and blend briefly until both basil and olives are finely chopped.
  • Mix them in a bowl with the cheese and plenty of black pepper.
  • Grease 2 baking sheets. Thinly roll out the pastry on a floured surface and cut out rounds with an 4 inch pastry cutter or upturned bowl.
  • Mix the second egg yolk with water and lightly brush the edges of the pastry.
  • Spoon the filling into the centers. Bring the pastry edges together over the filling, press them firmly together and crimp with your fingertips.
  • Place the empanadas on the baking sheets and brush with the remaining egg yolk, Sprinkle with sea salt and bake in a preheated ovenfor 20 minutes.

  • 300 grams plain flour
  • 200 grams lightly salted butter, cut into small dice
  • 4 egg yolks
  • Sea salt and pepper

Filling

  • 50 grams basil
  • 100 grams pitted green olives
  • 200 grams Manchego cheese, grated
