BUNUELOS

Preparation Method :

  • Use your fingers to break the almonds into smaller pieces or roughly chop the pine nuts. Scatter them on a plate.
  • Sift the flour on to a piece of greaseproof paper. Bring the milk to the boil in a saucepan with water.
  • Remove from the heat and tip in the flour.
  • Beat with a wooden spoon until the dough forms a smooth, thick paste. Leave to cool slightly.
  • Beat the egg with the extra yolk and gradually mix into the dough.
  • Stir in all but the cheese and a little salt and pepper.
  • Take teaspoonfuls of the mixture, drop them on to the plate of nuts and turn them lightly in the nuts so they're roughly coated.
  • Finish by rolling them lightly into balls.
  • Heat the oil to a depth of 2 inch in a large saucepan or deep-fat fryer until a little of the dough sizzles on the surface.
  • Cook the fritters in batches for about 3 minutes until they are golden.
  • Drain on kitchen paper and serve sprinkled with the reserved cheese.

  • 200 ml milk
  • 2 eggs and 2 yolks
  • 300 grams Manchego cheese, finely grated
  • Cooking oil for deep-frying
  • Salt and pepper
