BOILED STURGEON

Preparation Method :

  • Rinse the sturgeon and Place in a large saucepan together with the carrot, parsley, bay leaf, salt and pepper.
  • Add water and the boil then reduce the heat and simmer for 15 minutes.
  • Remove the fish from the pan with a spoon and refrigerate for 2 hours.
  • Whisk together the hardboiled egg with sour cream and butter. Keep it aside.
  • Transfer the fish in to the greased ovenproof dish and pour the sour cream mixture over top then sprinkle the breadcrumbs, lemon juice and vegetable oil.
  • Spread grated cheese evenly on the top.
  • Bake it for 20 minutes in preheated oven at 190 degree celcius.
  • Serve immediately.

INGREDIENTS

  • 6 Sturgeon Cutlets or Steaks
  • 2 Carrots
  • 240 ml Sour Cream
  • 1 tablespoon Butter
  • 2 Hard Boiled Egg Yolks
  • 3 tablespoon dry fine Breadcrumbs
  • 1 Bay leaf
  • 2 tablespoon Cooking oil
  • 1/2 Lemon juice
  • 150 gram Grated Hard Cheese e.g. Parmesan
  • A handful of Fresh Parsley (with stalks)
  • Salt and Pepper
