BAKLAZHANOVAYA IKRA

Preparation Method :

  • Pierce the eggplant in several places with a knife and bake it on a preheated oven at 190 degree Celsius.
  • Bake it for 40-50 minutes until it becomes soft keep turning midway through the baking time.
  • Remove from the oven and cool it then cut it two halves.
  • Scoop out the pulp and chop it finely.
  • Combine the pulp with the onion, tomato, garlic, oil, and vinegar and season with the salt and pepper.
  • Cover and keep it in a refrigerator for 1 hour or more.
  • Garnish with parsley and serve it.

INGREDIENTS

  • 1 teaspoon Cooking oil
  • 1 tablespoon red wine vinegar
  • 1 clove of garlic, minced
  • 1 eggplant
  • ½ onion, chopped
  • 1 tomato, chopped
