Preparation Method :
- Pierce the eggplant in several places with a knife and bake it on a preheated oven at 190 degree Celsius.
- Bake it for 40-50 minutes until it becomes soft keep turning midway through the baking time.
- Remove from the oven and cool it then cut it two halves.
- Scoop out the pulp and chop it finely.
- Combine the pulp with the onion, tomato, garlic, oil, and vinegar and season with the salt and pepper.
- Cover and keep it in a refrigerator for 1 hour or more.
- Garnish with parsley and serve it.

- ½ onion, chopped
