ROLLED FISH FILLETS

Preparation Method :

  • Lay the fish fillets in a single layer in a glass dish. Mix together the oil and lemon juice and sprinkle over. Cover with clear film and marinate in the refrigerator for at least 1 hour.
  • Melt the butter in a pan and gently fry the mushrooms for 5 minutes, until tender and all the juices have evaporated. Stir in the chopped anchovies, thyme, salt and pepper.
  • Divide the mixture equally and spread evenly over the fish. Roll up and secure with cocktail sticks.
  • Dip each fish roll in beaten egg, then in breadcrumbs to coat. Repeat this process. Heat the oil to 180°C/350°F/Gas 4.
  • Deep fry in 2 batches for 4-5 minutes, or until well browned cooked through. Drain on kitchen paper. Remove the cocktail sticks and sprinkle with thyme.
  • Serve with grilled chicory.

INGREDIENTS

  • 8 sole fillets, about 200 grams skinned 
  • 3 tablespoon Cooking oil
  • 1 tablespoon lemon juice 
  • 2 tablespoon butter 
  • 200 grams button mushrooms, very finely chopped 
  • 4 anchovy fillets, finely chopped 
  • 1 teaspoon chopped fresh thyme, plus extra to garnish 
  • 2 eggs, beaten 
  • 125 grams white breadcrumbs oil, for deep frying
  • Salt and freshly ground black pepper 
  • Grilled chicory, to serve
