ROAST DUCKLING WITH HONEY

Preparation Method :

  • Preheat the oven to 220°C/425°F/ Gas 7 .Using a fork, pierce the duckling all over, except the breast, so that the fat runs out during cooking.
  • Rub all over the skin of the duckling with allspice and sprinkle with salt and pepper.
  • Put the duckling on a rack over a roasting tin and cook for about 20 minutes. Next reduce the oven temperature to 190°C/375°F/Gas 5 and cook for a further 2 hours.
  • Meanwhile, thinly pare the rind from the orange and cut into very fine strips. Heat the oil in a pan and gently fry the orange rind for 2-3 minutes. Squeeze the juice from the orange and set aside.
  • Transfer the duckling to a warmed Serving dish and keep warm. Dram oil all but 30ml/2 tablespoon fat from the tin. Sprinkle in the flour and stir well.
  • Stir in the stock, vinegar, honey, orange juice and rind. Bring to the boil, stirring the entire tune. Simmer for 2-3 minutes. Season the sauce and serve the duckling with watercress and thinly pared orange rind.

  • 2.25 kg oven-ready duckling
  • 1/2 teaspoon ground allspice
  • 1 orange
  • 1 tablespoon Cooking oil
  • 2 tablespoon plain flour
  • 150 ml chicken or duck stock 
  • 2 teaspoon red wine vinegar 
  • 1 tablespoon clear honey 
  • Salt and freshly ground black pepper watercress and thinly pared orange to serve
