LIVER AND BACON VARENYKY

Preparation Method :

  • Sift the flour and salt into a bowl. Make a well in the centre. Add the eggs and butter and mix to dough.
  • Knead the dough on a lightly floured surface for 2-3 minutes, until smooth. Wrap in clear film and leave to rest for 30 minutes.
  • For the filling, heat the oil in a pan and cook the onion for 5 minutes. Add the bacon and cook for a further 4-5 minutes. Stir in the liver and cook for 1 minute, until browned.
  • Put the liver mixture in a food processor or blender and process until it is finely chopped, but not smooth. Add the snipped chives and season with salt and pepper. Process for a few more seconds.
  • Roll out the dough on a lightly floured surface until 3mm/1/8 in thick. Stamp out rounds of dough with a 5cm/ 2 in cutter.
  • Spoon a teaspoon of filling into the middle of each round. Brush the edges of the dough with beaten egg and fold in half to make half-moon shapes. Leave to dry on a floured dish towel for 30 minutes.
  • Bring a pan of salted water to the boil. Add the oil, and then add the varenyky, in batches if necessary. Bring back to the boil and cook them at a gentle simmer for 10 minutes, until tender. Drain well and serve hot, garnished with snipped chives.
  • Serve with fresh capers. 

INGREDIENTS

  • 200 grams plain flour
  • ¼ teaspoon
  • 2 eggs, beaten
  • 1 tablespoon butter, melted beaten egg, for sealing
  • 1 tablespoon Cooking oil

For the filling

  • 1 tablespoon Cooking oil
  • ½ small onion, finely chopped
  • 125 grams smoked streaky bacon, roughly chopped 
  • 250 grams chicken or lamb's liver, roughly chopped
  • 2 tablespoon snipped fresh chives, plus extra for garnish 
  • Salt and freshly ground black pepper
