EGGS WITH CAVIARE

Preparation Method :

  • Remove the yolks from the halved eggs. Mash the yolks to a smooth paste in a bowl with the spring onions, mayonnaise and mustard. Mix well and season with salt and pepper.
  • Fill the egg whites with the yolk mixture and arrange them on a serving dish. Spoon a little caviar or roe on top of each before serving with watercress.

INGREDIENTS

  • 6 eggs, hard-boiled and halved, lengthways
  • 4 spring onions, very finely sliced
  • 2 tablespoon mayonnaise
  • ¼ teaspoon Dijon mustard
  • 2 tablespoon caviare or black pepper small sprigs of dill, to garnish watercress, to serve
