CHICKEN BITKI

Preparation Method :

  • Melt the butter in a pan and fry the mushrooms for 5 minutes until soft and all the juices have evaporated. Allow to cool.
  • Mix the crumbs, chicken, yolks, nutmeg, salt and pepper and flat mushrooms well.
  • Whisk the egg whites until stiff. Stir hall into the chicken mixture, then fold in the remainder.
  • Shape the mixture into 12 even meatballs, about 7.5 cm / 3 in long and 2.5 cm /1 in wide. Roll in the flour to coat.
  • Heat the oil in a frying pan and fry the bitki for 10 minutes, turning until evenly golden brown and cooked through.
  • Serve hot with a green salad and pickled beetroot.

INGREDIENTS

  • 1 tablespoon butter, melted
  • 125 grams flat mushrooms finely chopped
  • 50 grams fresh white breadcrumbs 
  • 350 grams chicken breasts or guinea fowl, minced or finely chopped
  • 2 eggs, separated
  • ¼ teaspoon grated nutmeg
  • 2 tablespoon plain flour
  • 3 tablespoon Cooking oil
  • Salt and freshly ground black pepper
  • Green salad and grated pickled beetroot, to serve
