CARP WITH GREEN HORSERADISH SAUCE

Preparation Time :
40 minutes

Preparation Method :

  • Cut the fish into thin strips, about 6 cm/ 2½ in long by 1 cm / ½ in thick. Season the flour with salt and pepper. Dip the strips of fish in the flour, then in the beaten egg and finally in the breadcrumbs.
  • Heat 1 cm/ ½ in of oil in a frying pan. Fry the fish in batches for 3-4 minutes, until golden brown. Drain on kitchen paper and keep warm until all the Strips are cooked.
  • For the sauce, put the horseradish, salt, cream and watercress in a small pan. Bring to the boil and simmer 2 minutes. Stir in the chives and eggs, if using.
  • Serve the sauce with the fish.

INGREDIENTS

  • 750 grams carp, skinned and filleted
  • 3 tablespoon plain flour 
  • 1 egg, beaten
  • 100 grams fresh white breadcrumbs 
  • Cooking oil, for frying 
  • Salt and freshly ground black pepper 
  • Lemon wedges, to serve

For the sauce

  • 15 grams fresh horseradish, finely grated
  • Pinch of salt
  • 150 ml double cream
  • 1 bunch of watercress, trimmed and finely chopped
  • 2 tablespoon snipped fresh chives
  • 2 eggs, hard-boiled and finely chopped (optional)
