AUBERGINE CAVIARE

Preparation Method :

  • Preheat the oven to 180° C/350°F/ gas 4. Put the aubergines on an oiled rack over a roasting tin. Bake in the oven for 25-30 minutes, or until soft. Leave to cool.
  • Meanwhile, fry the finely chopped onion and garlic in 15ml/1 tablespoon of the oil for 10 minutes.
  • Using a spoon, remove the baked aubergine flesh, then puree in a food processor until smooth. With the motor running, add the remaining oil.
  • Spoon into a bowl. Stir in the onions, tomatoes, lemon juice and yogurt, salt and pepper to taste. Cover with clear film and chill for 4 hours. 
  • To serve, garnish with spring onions and accompany with toasted bread twists.

INGREDIENTS

  • 1.5 kg aubergines
  • 1 onion, very finely chopped
  • 1 garlic clove, crushed
  • 75 ml Cooking oil
  • 450 gram tomatoes, peeled and chopped
  • 1 teaspoon lemon juice
  • 150 ml natural yogurt
  • 1 teaspoon salt
  • Freshly ground black pepper spring onion slices, to garnish toasted bread twists, to serve
