- Line a terracotta pot with a double layer of muslin cloth (leaving excess to hang over the sides).
- Put the mascarpone, ricotta, caster sugar and vanilla in a blender and blend it until smooth.
- Transfer to a bowl.
- Whip the cream with a beater and then add into the above prepared cheese mixture.
- Add almonds, chocolate and then fruit and mix it well.
- Transfer this into the terracotta pot and fold over the excess cloth.
- Cover with a saucer and place a weight on top.
- Keep it in the refrigerator overnight.
- Remove saucer and weight from the paskha and unfold the cloth.
- Invert pots onto a serving plate, peel off the muslin.
- Garnish with berries and serve.

- 250 grams ricotta cheese
- 200 grams mascarpone
- 80 grams castor sugar
- 1 tea spoon vanilla extract
- 75 ml double cream
- 50 grams toasted almonds (chopped)
- 50 grams chocolate (chopped)
- 100 grams glace fruits such as apricots, cherries and peaches (chopped)
