PASKHA

Preparation Time :

Preparation Method :

  • Line a terracotta pot with a double layer of muslin cloth (leaving excess to hang over the sides).
  • Put the mascarpone, ricotta, caster sugar and vanilla in a blender and blend it until smooth.
  • Transfer to a bowl.
  • Whip the cream with a beater and then add into the above prepared cheese mixture.
  • Add almonds, chocolate and then fruit and mix it well.
  • Transfer this into the terracotta pot and fold over the excess cloth.
  • Cover with a saucer and place a weight on top.
  • Keep it in the refrigerator overnight.
  • Remove saucer and weight from the paskha and unfold the cloth.
  • Invert pots onto a serving plate, peel off the muslin.
  • Garnish with berries and serve.

INGREDIENTS

  • 250 grams ricotta cheese
  • 200 grams mascarpone
  • 80 grams castor sugar
  • 1 tea spoon vanilla extract
  • 75 ml double cream
  • 50 grams toasted almonds (chopped)
  • 50 grams chocolate (chopped)
  • 100 grams glace fruits such as apricots, cherries and peaches (chopped)
