VEGETABLE SOUP

Preparation Time :
20 minutes

Cooking Time :
2 hours 40 minutes

Preparation Method :

  • Using a deep frying pan, saute the onion gently in the olive oil until it is soft.
  • Add the meat, shaking the pan frequently to prevent the meat from sticking, and cook for 10 minutes.
  • Add the vegetables and cook a further 15 minutes, turning frequently.
  • Transfer everything to a large, heavy based saucepan and add the stock, tomato puree, dill and seasoning.
  • Simmer gently on a low heat for 2 hours.
  • Allow it to cool, then remove the fat layer from the top.
  • Reheat just before serving, adding the vinegar as a final touch. Garnish with the chopped parsley.

INGREDIENTS

  • 1 large onion, finely sliced
  • 3 tablespoons Cooking oil
  • 500 grams stewing beef, cubed
  • 1 large potato, peeled and sliced
  • 1 red pepper, seeded and sliced
  • 2 carrots, peeled and thinly sliced
  • 75 grams white cabbage, shredded 1.25 litres homemade
  • Beef stock 1 tablespoon tomato puree
  • 1 teaspoons dill
  • Salt and pepper
  • 2 tablespoons tarragon vinegar
  • Finely chopped parsley, to garnish
