Preparation Method :
- Using a deep frying pan, saute the onion gently in the olive oil until it is soft.
- Add the meat, shaking the pan frequently to prevent the meat from sticking, and cook for 10 minutes.
- Add the vegetables and cook a further 15 minutes, turning frequently.
- Transfer everything to a large, heavy based saucepan and add the stock, tomato puree, dill and seasoning.
- Simmer gently on a low heat for 2 hours.
- Allow it to cool, then remove the fat layer from the top.
- Reheat just before serving, adding the vinegar as a final touch. Garnish with the chopped parsley.

- 1 large onion, finely sliced
- 3 tablespoons Cooking oil
- 500 grams stewing beef, cubed
- 1 large potato, peeled and sliced
- 1 red pepper, seeded and sliced
- 2 carrots, peeled and thinly sliced
- 75 grams white cabbage, shredded 1.25 litres homemade
- Beef stock 1 tablespoon tomato puree
- 1 teaspoons dill
- Salt and pepper
- 2 tablespoons tarragon vinegar
- Finely chopped parsley, to garnish
