TOMATO SOUP

Preparation Method :
- Scald, peel and seed tomatoes, then chop finely.
- Saute the garlic, onions, coriander, paprika and seasonings in the olive oil until soft, then add the tomato pulp and cook for atleast 6 minutes.
- Add the stock or use half this quantity of stock made up to 600 ml with tinned tomato juice, if needed.
- Cover and simmer 20 minutes. Cool the soup, then puree in a blender.
- Finally stir in the lemon juice, reheat and serve garnished with parsley.
INGREDIENTS
- 1 kg medium tomatoes
- 1 clove garlic, finely chopped
- 1 medium onion, finely chopped
- 750 ml homemade chicken stock
- Pinch of ground coriander
- Pinch of paprika
- Salt and pepper, to taste
- 4 tablespoons Cooking oil
- Juice of 1 lemon
- Finely chopped parsley, to garnish
