Preparation Method :
- Saute the onion gently in half the butter until soft, then add the drained lentils and stir until glazed with the butter.
- Add the stock, cumin, salt and pepper ,simmer until the lentils have almost disintegrated. Raw lentils will take 2 hours.
- Test the lentils to see whether they are tender, then cool and put the mixture briefly through a blender.
- Fry the diced bread (or croutons) in the remaining butter with the crushed garlic.
- Return the soup to the pan, reheat, and bring gently to the boil.
- Leave to stand for a few minutes before serving, and add the oil and lemon juice. Garnish with the croutons and a little parsley.

- 1 large onion, finely chopped
- 50 grams butter
- 250 grams lentils, soaked overnight
- 1.2 litres homemade beef stock
- 1 teaspoons ground cumin
- Salt and freshly ground black pepper
- 3 slices white bread, crusts removed, diced
- 1 clove garlic, crushed
- 2 tablespoons Cooking oil
- 3 tablespoons lemon juice
- Finely chopped parsley, to garnish
