CHILLED CUCUMBER AND YOGHURT SOUP

- Wipe the cucumber clean, but do not peel it. Chop coarsely, sprinkle with salt and allow to stand for 30 minutes.
- Rinse and drain, and put it in a blender with the remaining ingredients (except for the paprika). Blend until the-soup is creamy. Chill.
- Serve in chilled bowls, each garnished with a sprinkling of the paprika.
INGREDIENTS
- 1 large cucumber
- 600 ml natural yoghurt
- 100 grams fresh tomato puree
- 1 clove garlic, finely chopped
- Salt to taste
- Pinch of ground coriander,
- Mint and paprika, to garnish
