AUBERGINE SALAD

Preparation Method :
- Cut the aubergines into 5 -6mm thick slices. Sprinkle with salt and leave for 40 minutes, weighted down with a flat dish to help remove the bitter juices.
 - Rinse the aubergine slices and pat dry on kitchen paper.
 - Saute the slices in hot oil until they are brown on both sides. Drain on paper towels.
 - Mix the garlic, salt and pepper into the yoghurt.
 - Arrange the aubergine slices in layers in a flat serving dish and coat well with the yoghurt.
 - Sprinkle with the paprika, chill and serve.

- 3 medium aubergines
 - Salt
 - 6 tablespoons Cooking oil
 - 3 cloves garlic, crushed
 - Freshly ground black pepper
 - 120 ml natural Yoghurt
 - Pinch each of paprika and cumin
