AUBERGINE SALAD

Serves :

Preparation Time :
1 hour

Cooking Time :
15 minutes

Preparation Method :

  • Cut the aubergines into 5 -6mm thick slices. Sprinkle with salt and leave for 40 minutes, weighted down with a flat dish to help remove the bitter juices.
  • Rinse the aubergine slices and pat dry on kitchen paper.
  • Saute the slices in hot oil until they are brown on both sides. Drain on paper towels.
  • Mix the garlic, salt and pepper into the yoghurt.
  • Arrange the aubergine slices in layers in a flat serving dish and coat well with the yoghurt.
  • Sprinkle with the paprika, chill and serve.

INGREDIENTS

  • 3 medium aubergines
  • Salt
  • 6 tablespoons Cooking oil
  • 3 cloves garlic, crushed
  • Freshly ground black pepper
  • 120 ml natural Yoghurt
  • Pinch each of paprika and cumin
