- First saute the pine nuts lightly in a little butter and set aside. Heat the oven to 140°C / 375°F / Gas Mark 5.
- Beat the eggs In a mixing bowl, then add onions, puree, allspice, salt and pepper. Mix it well.
- Knead the lamb thoroughly. Make a hollow in the centre, pour in the egg mixture, add the pine nuts and mix well.
- Finally add the fresh breadcrumbs to bind the mixture. Form into a loaf shape, and sprinkle with a little cold water and dot with butter.
- Wrap in foil and bake for 1½ hours, unwrap the foil for the 30 minutes ,allow to brown.
- Syrian meatloaf may be served either hot or cold. It is a good picnic dish. Serve with side dishes of labneh and salad.

- Lemon wedges, cress or parsley, to garnish
