SHOULDER OF LAMB WITH SAFFRON

Serves :

Preparation Time :
3 hours

Cooking Time :
2 hours 20 minutes

Preparation Method :

  • Chop the garlic into slivers and insert in small cuts all over the lamb.
  • Mix the herbs, salt, pepper and half the oil then marinate the lamb for atleast 2 hours.
  • In a deep large frying pan, saute the onion in the remaining oil until golden brown.
  • Add the juice of 1 lemon, season with cayenne pepper and simmer for 5 minutes.
  • Remove to a large casserole. Preheat the oven to 180°C / 350°F / Gas Mark 4.
  • Now heat the marinating oil in the frying pan, add the shoulder and sear on all sides.
  • Add the juice of the second lemon mixed with the saffron and transfer to the casserole.
  • Cook until tender, about 2 hours.
  • Serve the lamb, carved into slices, garnished with sliced lemon and accompanied by rice.

INGREDIENTS

  • 3 garlic cloves, peeled
  • 1.50 kgs shoulder of lamb
  • 1 teaspoon mixed herbs
  • Salt and pepper
  • 6 tablespoons Cooking oil
  • 2 sliced onions
  • Juice of 2 lemons
  • Pinch of cayenne pepper
  • Saffron, to colour
