SAFFRON RICE

Preparation Time :
2 hours

Cooking Time :
30 minutes

Preparation Method :

  • Wash and soak the rice for atleast 2 hours. Rinse in a sieve under running water until clean and then drain.
  • Brown the pine nuts in the oil, then add onions and saute them until soft and golden. Divide the mixture in half.
  • Add the raisins and one half of the mixture to the rice with salt and saffron or turmeric.
  • Bring 700 ml of water to the boil, add the rice etc., and stir for 1 minute over a medium heat.
  • Reduce the heat, simmer until the water is absorbed, about 20 minutes.
  • Stir in the rest of the onions and pine nuts, mix it well and then serve immediately.

INGREDIENTS

  • 400 grams rice
  • 3 tablespoons pine nuts
  • 2 tablespoons Cooking oil
  • 3 finely chopped medium onions
  • 2 tablespoons raisins
  • 1 teaspoon salt
  • Enough saffron or turmeric to colour
