ROAST LEG OF LAMB WITH YOGHURT AND LEMON

1 hour 30 minutes

Preparation Method :

  • Season lamb well with salt and black pepper. Cut the garlic into small slivers and insert in cuts all over the leg. Set aside for atleast 4 hours.
  • Preheat the oven to 230°C / 450°F / Gas Mark 8.
  • Heat the oil in a roasting dish in the oven until it sizzles, and sear the lamb on all sides, about 15 - 20 minutes.
  • Remove from oven and allow to cool slightly, then pour half the lemon juice over it, the rind and half the yoghurt.
  • Reduce the oven heat to about 190°C / 375°F / Gas Mark 5.
  • Replace the lamb in the oven and bake, turn once and add more lemon juice and yoghurt.
  • Add water if the lemon juice dries up. Do not turn after the final hour, to allow the yoghurt to form a golden brown crust.
  • Serve this crusty tender lamb in slices, with boiled potatoes ,cumin and any green or tomato salads.

INGREDIENTS

  • 1 leg of lamb, about 1.75 kgs
  • Salt and freshly ground black pepper
  • 4 cloves garlic
  • 6 tablespoons Cooking oil
  • 6 tablespoons lemon juice, plus a little grated lemon rind
  • 150 ml natural yoghurt
