ROAST CHICKEN STUFFED WITH RICE AND PINE NUTS

Preparation Time :
45 minutes

Cooking Time :
2 hours 30 minutes

Preparation Method :

  • Use frying pan saute the onion in two-thirds of the melted butter until it turns soft and golden.
  • Add the liver and sausage meat and toss until lightly brown.
  • Add rice, pine nuts, cinnamon, allspice, salt and pepper ,cook for 5 minutes.
  • Add stock and cook over a low heat until it is absorbed, about 15 minutes. Allow to cool. Preheat the oven to 190°C / 375° F / Gas Mark 5.
  • Rub the entire chicken with salt and pepper. Spoon in the stuffing and close the openings with either small skewers or thread.
  • Brush with remaining melted butter at roast until the chicken is crisp and tender about 2 hours. To crisp the skin.

INGREDIENTS

  • 1 finely chopped large onion
  • 100 grams butter, melted
  • 75 grams minced chicken livers
  • 250 grams sausage meat
  • 200 grams long-grain rice
  • 50 grams pine nuts
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • Salt and freshly ground black pepper
  • 200 ml of chicken stock
  • 1.75 kgs chicken
