OKRA AND LAMB STEW

Cooking Time :
2 hours 20 minutes

Preparation Method :

  • Wash okra and cut off the stems, take care not to puncture the pods.
  • Soak pods in vinegar for 30 - 35 minutes,drain and dry on a kitchen paper.
  • Saute garlic and coriander in the butter in a large saucepan or casserole dish, then add the lamb and seal over a high heat.
  • Turn each piece until it changes colour, then add okra and tomatoes. Simmer for 5 - 10 minutes, then cover with the stock.
  • Season with salt and pepper, stir well, and simmer on a low heat for 2 hours or until tender.
  • Sauce should be greatly reduced. Add the lemon juice just before serving.

INGREDIENTS

  • 750 grams young okra
  • Vinegar
  • 3 cloves garlic, crushed
  • 1 teaspoon ground coriander
  • 1½ tablespoons butter
  • 1 kg lean lamb, cubed
  • 6 medium ripe chopped tomatoes or 300 grams can with juice
  • 350 ml meat stock
  • Salt and freshly ground black pepper
  • 1½ tablespoons lemon juice
