LEMON CHICKEN CASSEROLE

Preparation Time :
20 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Skin and bone the chickens and cut the flesh into cubes. Mix these with the onions, garlic, lemon juice, salt and pepper in a large bowl.
  • Cover, chill and marinate for atleast 10 - 12 hours.
  • In a deep saucepan, saute the chicken mixture in the butter, then add 1 cup of half water and lemon juice to taste.
  • Cover and simmer on a low heat until tender for about 30 minutes. Garnished with paprika and parsley. Serve with saffron rice.

INGREDIENTS

  • 1.5 kgs chicken or 2 small chickens
  • 3 medium onions, chopped
  • 3 cloves garlic, crushed
  • About 6 tablespoons lemon juice
  • Salt and pepper
  • 2 tablespoons butter
  • Pinch of paprika
  • Parsley to garnish
