KIDNEYS IN TOMATO SAUCE

Serves :

Preparation Time :
2 hours 30 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Soak the kidneys in water with 2 teaspoons of lemon juice or vinegar for about 2 hours.
  • Drain, skin, slice in half and remove the cores. Cut into quarters.
  • Saute the onion, garlic and seasonings in the butter.
  • Add kidneys and toss lightly until the colour changes. Add tomato pulp and puree, mixing well.
  • Finally add the salt and pepper and 1 - 2 tablespoons water.
  • Cook gently on a low heat, about 15 - 20 minutes, according to how you like kidneys done.
  • Serve it with plain rice and a green salad.

INGREDIENTS

  • 12 lamb's kidneys
  • Lemon juice or vinegar
  • 2 finely chopped onions
  • 2 cloves garlic, crushed
  • Pinch each of chilli powder, ground coriander, cumin, and chopped parsley
  • 2 tablespoons butter
  • 4 skinned and pulped medium tomatoes
  • 1 tablespoon tomato puree
  • Salt and freshly ground black pepper
