HERB AND NUT OMELETTE

Serves :

Preparation Time :
60 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Melt half the butter in an ovenproof frying pan. Add the spring onions, lettuce, dill and parsley and saute until the spring onions are transparent.
  • Add the remaining butter and allow to melt.
  • Heat the oven to 180°C / 350°F / Gas Mark 4.
  • Beat the eggs well, then add saffron or turmeric, cinnamon, salt and pepper then add bicarbonate of soda. Stir it in the raisins and nuts.
  • Pour this mixture into the frying pan do not stir. Transfer the mixture to the preheated oven and bake it until colour turns golden and set.
  • Serve immediately with a tomato salad.

INGREDIENTS

  • 2 tablespoons butter
  • 6 spring onions, finely chopped
  • 2 lettuce leaves, finely chopped
  • 1 teaspoon dried dill
  • 4 tablespoons chopped parsley
  • 8 eggs
  • Saffron or pinch of turmeric to colour
  • A pinch of cinnamon
  • salt and pepper a pinch of bicarbonate of soda
  • 30 grams  raisins, roughly chopped
  • 30 grams  chopped walnuts
