GROUND MEAT KEBABS

Preparation Time :
30 minutes

Cooking Time :
1 hour

Preparation Method :

  • Light the barbecue before preparation.
  • Put the meat into a food processor and until combined.
  • With moistened hands, break off walnut- sized lumps of the mixture and mould into sausage shapes around a skewer (two per skewer).
  • Fill 6 skewers in all. Dust with flour to hold firmly, then brush lightly with oil and cook over the Lighted barbecue or under a preheated grill, turn it frequently.
  • Serve on a platter lined with lettuce, garnished with lemon wedges and hummus or muhammara side dips. Serve with rice and salad.

INGREDIENTS

  • 1 kg lean minced beef or lamb
  • 4 finely chopped medium onions
  • 6 tablespoons coarsely chopped parsley
  • Salt and freshly ground black pepper
  • ½ teaspoon ground allspice
  • ½ teaspoon cayenne pepper
  • Flour, for dusting
  • Cooking oil, for brushing
