- A barbecue is ideal for cooking these chicken kebabs, good grill is perfectly adequate.
- The chicken pieces should be of a size that will stay firmly on the skewers (leaving the skin on helps).
- Combine the oil, lemon juice, garlic, salt and pepper in a bowl, place the chicken cubes in it.
- Cover and marinate for several hours, turn it occasionally. Preheat the grill or light the barbecue.
- Dissolve the saffron or turmeric in melted butter. Thread the chicken pieces on skewers and brush it with this mixture.
- Cook over or under a high heat, turning and basting frequently with the butter, for about 10 -15 minutes.
- Serve the kebabs on the skewers on a bed of saffron rice garnished with sliced oranges.

- Juice of 2 large lemons
- 5 tablespoons peanut butter
- 175 ml IDHAYAM sesame oil
- Salt to taste
- Freshly ground black pepper
- 2 kgs chicken, cut into 6 pieces
