FRENCH BEAN STEW

Cooking Time :
1 hour

Preparation Method :

  • Prepare the tomato sauce. Saute the garlic and coriander in the oil, then add the onions and cook the mixture for 15 minutes.
  • Add the tomato puree, tomatoes and parsley ,crush and blend into a puree.
  • Mix in the salt, pepper, paprika and lemon juice then simmer uncovered for 10 - 15 minutes. Stir frequently to make a rich, aromatic sauce.
  • Trim the beans as necessary and place it in a large saucepan with the sauce and enough water to barely cover. Simmer until tender (about 20 minutes).
  • If you prefer your beans cooked so as to be firm when eaten, remove after 10 minutes and set aside while you reduce the sauce to a thicker consistency.
  • Return the beans and reheat to serve.

INGREDIENTS

  • 1 kg French beans

Tomato Sauce

  • 3 cloves garlic, crushed
  • ½ teaspoon ground coriander
  • 2 tablespoons Cooking oil
  • 2 medium chopped onions
  • 1½  tablespoons tomato puree
  • 6 medium skinned tomatoes  
  • 1 tablespoon chopped parsley
  • Salt and white pepper
  • ½  teaspoon paprika
  • Juice of 1 lemon
