- Put the chicken, onion, garlic, celery, salt and pepper in a large saucepan, cover with water and simmer until tender 1½ hours.
- Remove and drain the chicken, keep it warm in a low oven.
- Chill the stock quickly, then skim as much fat as possible off the surface.
- Cook the rice and keep warm in a low oven.
- Meanwhile make the sauce. Put the ground walnuts in a deep frying pan and add 300 ml of stock.
- Bring to the boil, then simmer on a high heat, stirring until the mixture thickens. Season with more salt and pepper.
- Now blend oil and paprika until the oil becomes bright red.
- Cut the chicken into serving portions, arrange them on a bed of the rice. Cover with sauce and trickle the red oil on top.
