CIRCASSIAN CHICKEN

Preparation Method :

  • Put the chicken, onion, garlic, celery, salt and pepper in a large saucepan, cover with water and simmer until tender 1½ hours.
  • Remove and drain the chicken, keep it warm in a low oven.
  • Chill the stock quickly, then skim as much fat as possible off the surface.
  • Cook the rice and keep warm in a low oven.
  • Meanwhile make the sauce. Put the ground walnuts in a deep frying pan and add 300 ml of stock.
  • Bring to the boil, then simmer on a high heat, stirring until the mixture thickens. Season with more salt and pepper.
  • Now blend oil and paprika until the oil becomes bright red.
  • Cut the chicken into serving portions, arrange them on a bed of the rice. Cover with sauce and trickle the red oil on top.

INGREDIENTS

  • 1.5 kgs chicken
  • 1 large onion, chopped
  • 1 clove garlic, chopped
  • 2 celery sticks, chopped
  • Salt and freshly ground black pepper
  • 400 grams long-grain rice
  • 100 grams finely chopped walnuts
  • 2 tablespoons Cooking oil
  • 1 teaspoon paprika
