CHICKEN MUSAKHAN

Preparation Method :

  • Place the chicken stock pieces in a casserole, cover it with stock and add celery, sliced onion , salt and pepper.
  • Cover and simmer until tender, about 45 minutes. Remove the chicken and set aside a little of the stock.
  • While the chicken is cooking, saute the onion rings and pine nuts in the oil.
  • Arrange the bread on the grill tray and top each piece with a portion of chicken, some of the onion rings and dribble a little stock over them.
  • Sprinkle each with sumak and grill until the chicken turns golden brown. Take care not to burn the bread.
  • Serve garnished with pine nuts and extra onion rings.
  • Musakhan can be eaten with a salad. It is an ideal for lunch in the garden.

INGREDIENTS

  • 1.5 kgs chicken, cut into 6 portions
  • 500 ml chicken stock
  • 1 small celery, stalk with leaves
  • 1 medium onion, sliced
  • Salt and pepper
  • 4 small onions sliced into fine rings
  • 1 tablespoon pine nuts
  • 3 tablespoons Cooking oil
  • 6 pita breads
  • 2 teaspoons sumak
