CHICKEN KEBABS

Preparation Method :

  • A barbecue is ideal for cooking these chicken kebabs, good grill is perfectly adequate.
  • The chicken pieces should be of a size that will stay firmly on the skewers (leaving the skin on helps).
  • Combine the oil, lemon juice, garlic, salt and pepper in a bowl, place the chicken cubes in it.
  • Cover and marinate for several hours, turn it occasionally. Preheat the grill or light the barbecue.
  • Dissolve the saffron or turmeric in melted butter. Thread the chicken pieces on skewers and brush it with this mixture.
  • Cook over or under a high heat, turning and basting frequently with the butter, for about 10 -15 minutes.
  • Serve the kebabs on the skewers on a bed of saffron rice garnished with sliced oranges.

INGREDIENTS

  • 1.25 kgs chicken, boned and cut into good size
  • 6 tablespoons IDHAYAM sesame oil
  • 6 tablespoons lemon juice
  • 2 cloves garlic, crushed
  • Freshly ground black pepper and Salt
  • 1 tablespoon melted butter
  • Saffron or turmeric to colour
