CHELO PERSIAN STEAMED RICE

Preparation Time :

Cooking Time :
40 minutes

Preparation Method :

  • Wash rice in boiling water then soak in salted water atleast for 6 hours.
  • Rinse the rice in a sieve under running water until it is clear.
  • Place in a pan add a pinch of salt, cover with boiling water and cook vigorously for 10 minutes. Wash and drain it again.
  • To steam the rice, heat 120 ml cold water and 1 tablespoon butter in a saucepan.
  • Add rice smoothing it flat. Fold a clean teatowel in half and place it over the top of the saucepan then cover it with the lid.
  • The teatowel will trap and absorb the steam to remain fluffy.
  • After 15 - 20 minutes the rice should be ready. Trickle the remaining butter over it and serve.
  • Serve an egg yolk in a hollow made in each portion of chelo if needed.

  • 400 grams Basmati rice
  • 3 tablespoons melted butter
  • 1 tablespoon salt
  • 1 egg yolk if needed
