BRAISED CHOPS WITH VEGETABLES

Preparation Method :

  • Use 2 large courgettes or 500 grams leeks.
  • Trim the chops of any excess fat and brown in butter on both sides.
  • Remove from the frying pan and place in a greased ovenproof dish. Preheat the oven to 190°C / 375°F / Gas Mark 5.
  • Saute the onion, garlic and spices in the remaining butter in the frying pan until softened.
  • Add tomatoes, half parsley , salt and pepper. Simmer for 10 minutes, then add the stock, mix it thoroughly.
  • Place the sliced vegetables on top of the chops, and pour the sauce mixture over them.
  • Add more seasoning, as desired. Cook in the oven until the chops are tender and the sauce is rich and aromatic.
  • Garnish with the remaining parsley. Serve with potato pui or with baked potatoes, slashed open and garnished with butter and cumin.

INGREDIENTS

  • Courgettes, leeks or other vegetables
  • 10 fleshy lamb chops
  • 2 tablespoons butter
  • 1 large onion, sliced
  • 2 - 3 cloves garlic, chopped
  • Generous pinch of coriander, paprika and ground allspice
  • 6 medium sliced ripe tomatoes
  • 2 tablespoons finely chopped parsley
  • Salt and freshly ground black pepper
  • 170 ml stock
