BARBECUED FISH WITH DATES

Preparation Method :

  • Soak the dates in cold water until they become soft - about 3 - 4 hours. Gut and rinse the fish well under cold running water. Do not scale. Dry the cavities with kitchen paper and sprinkle with a little salt and pepper.
  • Mix onion, garlic and spices with little water for stuffing the fish , sewing up the cavities, or securing with skewers.
  • Drain the dates then puree in a blender with a little water or put through a sieve. Blend just long enough to obtain a soft paste, then smear this on both sides of each fish.
  • Cook over barbecue about 5 minutes each side. Test with a fork to make sure the flesh is tender. A fish clamp is useful for the dish.
  • Serve hot with a rice dish. The skin together with the scales can be peeled off when eating. The date puree gives the flesh a pleasant nutty flavour.

INGREDIENTS

  • 250 grams dried, stoned dates 
  • 4 whole white fish, about 350 grams each 
  • Salt and pepper 
  • 2 medium onions, finely chopped
  • 1 clove garlic, crushed 
  • ½ teaspoon Turmeric
  • Generous pinch each of ground cumin, coriander, cardamon, nutmeg and cloves
