BAKED FISH WITH SAFFRON RICE

Preparation Method :

  • Wash and clean the fish under running water and pat it dry with kitchen paper. Rub over inside and out with a mixture of garlic, oil, lemon juice, salt and pepper.
  • Place the tomato and lemon slices inside the fish and sew up with cotton thread or skewer closed. Chill for 2 hours. Heat oven to 190°C / 375°F / Gas Mark 5.
  • Place the fish in a large, greased baking dish and cook for 45 - 50 minutes until the flesh is tender and the skin turn to golden brown.
  • Serve Baked fish on a bed of saffron rice and garnish it with lemon wedges and parsley.

INGREDIENTS

  • 1 large whole fish (sea bass or sea bream), 1.75 kgs, gutted 
  • 3 cloves garlic, crushed 
  • Cooking oil
  • Fresh lemon juice
  • Salt and freshly ground black pepper 
  • 1 large tomato, sliced 
  • 1 lemon, sliced 
  • 1 quantity Saffron Rice 
  • Lemon wedges and parsley
