BAKED AUBERGINE WITH CUMIN

Preparation Time :
45 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Preheat the oven to 220 - 230°C / 425 - 450°F / Gas Mark 7 - 8.
  • Wash and dry the aubergines. Slit the skin in several places to prevent them bursting, then in a pressure cooker about 12 - 15 minutes (steam until tender, about 30 - 40 minutes).
  • Allow it to cool, then cut each aubergine into three lengthways. Sprinkle with the garlic.
  • Heat the oil in the oven in an ovenproof dish. Put the aubergines in and sprinkle with paprika, cumin, cayenne pepper and a little salt. Bake for 5 - 6 minutes.
  • Just before serving, sprinkle with l drops of fresh lemon juice.

INGREDIENTS

  • 1 kg medium aubergines
  • 4 cloves garlic, crushed
  • 4 tablespoons Cooking oil
  • 1 teaspoon paprika
  • 1 heaped teaspoon ground cumin
  • 3 pinches cayenne pepper
  • Salt
  • Lemon juice
