BAKED AUBERGINE WITH CUMIN

Preparation Method :
- Preheat the oven to 220 - 230°C / 425 - 450°F / Gas Mark 7 - 8.
- Wash and dry the aubergines. Slit the skin in several places to prevent them bursting, then in a pressure cooker about 12 - 15 minutes (steam until tender, about 30 - 40 minutes).
- Allow it to cool, then cut each aubergine into three lengthways. Sprinkle with the garlic.
- Heat the oil in the oven in an ovenproof dish. Put the aubergines in and sprinkle with paprika, cumin, cayenne pepper and a little salt. Bake for 5 - 6 minutes.
- Just before serving, sprinkle with l drops of fresh lemon juice.
