STUFFED DATES

Preparation Method :

  • Preheat the oven to 160°C / 325°F / Gas Mark 3. Spread the almonds on a baking sheet and bake for 10 minutes, until they are oily, but not brown. Cool, then grind it in a food processor.
  • Add the egg white, sugar and almond extract, and process to give a firm paste. Add rose water, food colouring if using, and blend briefly. Chill overnight.
  • Open each date along the side it has been stoned and press a small amount of paste into each.

INGREDIENTS

  • 450 grams fresh dates, stoned

Almond Paste

  • 100 grams blanched almonds
  • 1 large egg white
  • 200 grams icing sugar
  • 2 teaspoons almond extract 
  • 2 drops rose water
  • Green food colouring, as desired
