MUHALLABIA GROUND RICE PUDDING

Preparation Time :

30 minutes

Preparation Method :

  • With a little of the milk, mix the ground rice and cornflour to a smooth paste.
  • Slowly heat the sugar in the rest of the milk, and add the rice paste, stir it continuously with a wooden spoon. Simmer the mixture just below boiling point, and take care not to let it burn on the bottom. The mixture should thicken in about 15 - 20 minutes.
  • Add the rose water and ground almonds and then continue stirring in one direction on a low heat. Simmer for further 5 minutes, then remove from the heat and cool slightly before pouring the mixture into an attractive glass bowl.
  • Garnish with almonds or pistachio nuts, and sprinkle with the nutmeg. Leave to chill for about 3 - 4 hours before serving.

INGREDIENTS

  • 2 litres milk 
  • 2 tablespoons ground rice 
  • 1 tablespoon corn flour 
  • 5 tablespoons sugar 
  • 1 tablespoon rose water 
  • 75 grams ground almonds chopped almonds or pistachio nuts to garnish 
  • Grated nutmeg, to sprinkle
