BANANA LOAF

Preparation Method :

  • Cream the butter and sugar together, then add the eggs, one at a time, beating after each addition. Add the cinnamon and vanilla and beat well.
  • Mash the bananas to a pulp, then stir into the mixture together with the walnuts. Combine well, then fold in the sifted dry ingredients alternating with the milk.
  • Preheat the oven to 180°C / 350°F / Gas Mark 5. Line a 23 cm loaf tin with greased greaseproof paper and pour in the mixture. Bake for 1 hour until a skewer comes out clean.

INGREDIENTS

  • 100 grams butter 
  • 3½ tablespoons sugar
  • 2 eggs
  • Pinch of cinnamon
  • 1 teaspoon vanilla extract
  • 3 medium ripe bananas
  • 25 grams walnuts, coarsely chopped 
  • 175 grams plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda 
  • Pinch of salt 
  • 1 tablespoon milk
