TURKISH COFFEE

Preparation Method :

  • Combine all the ingredients in a long handled coffee pot or tiny saucepan, stir well and bring to the boil.
  • As the froth forms on top, remove from the stove, stir again and return to the heat until the froth rises again.
  • Be very careful it does not boil over. Boil it briefly again, then stand aside for a few seconds.
  • Have the small cups ready to pour in the coffee, raising the pot (difficult with a saucepan) to get a nice head of froth on each cup.
  • The grounds should be allowed to settle a minute or two before the coffee is drunk.

INGREDIENTS

  • 3 tablespoons roasted ground coffee
  • 1 heaped teaspoon sugar
  • 2 small coffee cups water
  • Tiny pinch of ground cardamom
