FETA-STUFFED ANCHO CHILLIES

Preparation Time :
30 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Pre heat the oven 180°C / 350°F.
  • Make a slit in each chilli and carefully remove seeds and membranes.
  • Filling: Mix the feta and goat's cheeses, coriander, cumin and lemon juice in a bowl.
  • Spoon the filling into chillies and place in a baking dish. Pour a little water into baking dish, cover and bake for 20 - 22 minutes.
  • Salsa: Mix the tomatoes, onion, mint and black pepper in a bowl and toss to combine.
  • Divide the salsa between serving plates and top with a chilli.

INGREDIENTS

  • 6 ancho chillies, soaked in hot water for 20 minutes, Drained

Feta And Goat's Cheese Filling

  • 100 ml lemon juice
  • 500 grams soft feta cheese, crumbled
  • 150 grams goat's cheese
  • 4 tablespoons chopped fresh coriander
  • 1 teaspoon ground cumin

Two-Tomato Salsa

  • ½ red onion, sliced
  • 1 tablespoon shredded fresh mint
  • 250 grams cherry tomatoes, halved
  • 250 grams yellow pear tomatoes, halved
  • Crushed black peppercorns
