CORN AND BEAN BURRITOS

Preparation Method :

  • Preheat the oven to 200°C/400°F/ Gas Mark 6.
  • Mix the cheese, salt, crushed peppercorns, lemon juice and sprouted beans in a bowl.
  • In another bowl, mix together the tomato, lettuce and spring onions thoroughly. Add the corn and green chillies and mix.
  • Place the tortillas on a plate. Layer equal portions of the cheese and bean mixture and the corn and tomato mixture on each tortilla. Sprinkle the salsa on top and fold each tortilla over.
  • Arrange the tortillas in a baking dish and bake for twenty minutes.
  • Serve hot with the chilled sour cream.

 

INGREDIENTS

  • 200 grams sweet corn kernels
  • 500 grams sprouted beans, blanched
  • 8 refined flour tortillas
  • 200 grams grated mozzarella cheese
  • 20 black peppercorns, crushed
  • 2 tablespoon lemon juice
  • 2 medium tomato, chopped
  • 200 grams shredded lettuce
  • 4 spring onions, chopped
  • 4 green chillies, chopped
  • 200 grams Salsa
  • Salt to taste
  • Chilled sour cream, to serve
