CHICKEN TORTILLAS

Preparation Time :
20 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Place garlic, cumin, chilli powder, lime juice and tequila in a bowl and mix to combine.
  • Add chicken, turn to coat, then cover and marinate for 30 minutes.
  • Drain chicken and cook in a frying pan for 3 minutes each side or until golden and cooked through. Cut chicken into slices.
  • Warm tortillas in a dry frying pan over a medium heat for 20 - 30 seconds each side or until heated through.
  • Guacamole: Mix all the ingredients in a mixing bowl.
  • Top each tortilla with chicken, onion and coriander leaves, roll and accompany with bowls of Guacamole and sour cream.

INGREDIENTS

  • 1 kg boneless chicken breast fillets
  • 75 ml lime juice
  • 1 tablespoon tequila  
  • 2 cloves garlic, crushed
  • 1 teaspoon ground cumin
  • ½ teaspoon chilli powder
  • 12 corn tortillas
  • 1 red onion, sliced
  • ½ bunch fresh coriander
  • 125 grams sour cream  

Guacamole

  • 2 avocados, stoned, peeled and mashed
  • ½ small white onion, chopped
  • 2 fresh green chillies, chopped
  • 3 tablespoons chopped fresh coriander
  • 2 tablespoons lime juice
  • ½ tomato, chopped
  • Fresh coriander leaves
