BLACK BEAN TACOS

Preparation Time :
20 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Heat the oil in a pan and gently fry the onion and garlic for 5 minutes until translucent. Add the chilli, cumin and oregano and stir-fry for a minute to release the flavour.
  • Stir in the remaining ingredients, bring to the boil and simmer for 20 minutes, stirring occasionally, until most of the liquid has evaporated.
  • Shallow-fry the tortillas in very hot oil for 30 seconds until slightly browned. Drain on paper towels and keep warm while you fry the rest.
  • Form each tortilla into a boat shape in the palm of your hand, spoon in some of the filling and top with the heated sauce. They will become crisp as you do so.
  • Transfer to a warm serving dish into which all the tacos will just fit and serve immediately. 

INGREDIENTS

  • 4 tablespoon sesame oil
  • 2 onions, chopped finely
  • 6 garlic cloves, chopped finely
  • 6 fresh chillies, deseeded and chopped
  • 4 teaspoon ground cumin
  • 2 tablespoon dried oregano
  • 500 grams cooked black beans
  • 200 grams frozen sweet corn kernels
  • 500 grams chopped tomatoes
  • 500 ml Vegetable Stock  
  • Salt and pepper
  • Groundnut oil, for frying
  • 8 tortillas

To Serve

  • Roasted Corn Chilli Sauce
