PRAWN EMPANADAS

Makes :

Preparation Time :
30 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Dough: Place the flour and butter in a food processor and process until mixture resembles coarse breadcrumbs.
  • Add enough of the warm water with the machine running, to form a smooth dough.
  • Knead the dough on a lightly floured surface for 3 - 5 minutes, then divide into 12 portions. Cover and set aside.
  • Filling: Heat the oil in a frying pan over medium heat, add onion, oregano and thyme and cook for about 3 - 5 minutes or until onions are golden.
  • Add prawns, tomatoes and chillies and simmer for 5 minutes or until mixture thickens. Cool.
  • Roll each portion of dough out to a disc about 3 mm thick.
  • Place 3 tablespoons of filling on one half of each dough round, then fold over to enclose filling and pinch edges to seal.
  • Heat oil in a saucepan, then cook empanadas in batches for 2 minutes or until crisp and golden. Drain on absorbent kitchen paper and serve.

INGREDIENTS

Empanada Dough

  • 350 grams flour
  • 3 tablespoons soft butter
  • 150 ml warm water

Chilli and Prawn Filling

  • 500 grams peeled uncooked prawns
  • 1 tablespoon Cooking oil
  • 1 onion, chopped
  • 2 teaspoons fresh oregano leaves
  • 2 green tomatoes, peeled and chopped
  • 4 poblano chillies, roasted, seeded and peeled and chopped
  • 2 teaspoons fresh lemon thyme leaves
