FRESH CORN TAMALES

Preparation Method :

  • Place corn husks in a bowl, pour warm water to cover and soak for at least 20 - 30 minutes.
  • Place half the sweet corn kernels in a food processor and with machine running, slowly add in enough milk to make a mixture of cottage cheese consistency.
  • Transfer the mixture to a bowl and repeat with remaining corn kernels and milk. Stir sugar and butter into corn mixture.
  • Drain corn husks and pat dry with kitchen towel. Place a spoonful of corn mixture in the centre of each husk, fold husks around filling, then tie to secure.
  • Place it in a steamer over boiling water and steam for an hour or until firm to touch. Allow to stand for about 10 - 15 minutes before serving.

  • 750 grams fresh, frozen or canned sweet corn kernels
  • 2 tablespoons butter, softened
  • 50 ml milk
  • 2 tablespoons sugar
  • 28 dried corn husks
