COM CREPES WITH VEGETABLES

Preparation Method :

  • Batter: Place flour and corn meal in a bowl, mix to combine.
  • Add eggs, butter and enough milk to make a batter, then whisk until smooth. Stir in chopped sweet corn, coriander and chilli. Stand batter for about 20 - 30 minutes.
  • Filling: Brush sweet corn cob, red peppers, onions and tomatoes with chilli oil and cook on a preheated hot barbecue grill until vegetables are roasted. Cool slightly, then cut corn from cob.
  • Place vegetables in a heatproof dish, cover and keep warm.
  • Crepes: Heat an oiled frying pan over a medium heat.
  • Pour 3 tablespoons of batter into pan and swirl to coat base, then cook until golden. Remove crepe from pan and keep warm.
  • Repeat with remaining mixture to make 4 crepes.
  • Spoon the filling on to one half of each crepe and fold over.

INGREDIENTS

  • 50 grams flour
  • 50 grams corn meal  
  • 3 eggs
  • 2 tablespoons butter, melted
  • 225 ml milk
  • 150 grams cooked or canned sweet corn kernels, roughly chopped
  • 4 tablespoons chopped fresh coriander
  • 1 fresh green chilli, finely chopped

Vegetable Filling

  • 75 grams red peppers, quartered
  • 2 red onions, quartered
  • 1 cob sweet corn  
  • 4 plum tomatoes, quartered
  • Chilli oil
